PRODUCTION PROCESS

When we receive the grapes at Bodegas El Maestrino, the trailers are weighed to later be poured into our hopper, which through its siffins push the grapes to the landing stage.

Upon entering the tread, the nail goes through a different process depending on whether it is white or ink.

Note that we carry out the process in a continuous system, so the people who work with the product are not in direct contact with it at any time.

Once the process corresponding to each type of grape has been carried out, the product rests in our stainless steel tanks in which the transformation from must to wine is carried out, through controlled fermentation.

Once again we differentiate two processes depending on the grapes to be treated.

Finally, in our cellar is where we carry out the wine aging process, specifically our Crianza red wines, which spend between 6 or 8 months in American oak barrels, aging quietly to achieve unique aromas.

GRAPES VARIETIES

Bodegas El Maestrino has its own vineyard, so approximately 25% of the production is homegrown.

In the Matanegra Area, where we are located, the predominant varieties are: in white, Eva or Beba and Montúa, followed by Pardina, Cayetana Blanca and Macabeo and in red, in order of vineyard area, Tempranillo, Garnacha and Cabernet Sauvignon.

Specifically, the varieties we work with, and therefore predominant in our wines, are:

In white:

– Macabeo: This variety is very versatile. Depending on the growing conditions, it allows you to obtain dry whites, sparkling wines, or even natural sweet wines.

Dry wines are light, pleasant, balanced in acidity and sugar and pale in color. This variety allows the wines to be distinguished by their floral and fruity aromas, which can be enhanced with the mixture of other varieties.

– Cayetana: It is a fertile variety that matures quickly. The cluster is medium, compact and often offers double clusters. It is a grape that is mainly used for young wines for immediate consumption.

The wines obtained from it are pale yellow with greenish reflections, intense and complex aromas, reminiscent of ripe fruits (banana and apple).

– Pardina: This grape is a variety native to Extremadura, specifically predominant in the province of Badajoz. Its most notable characteristics are its strong resistance to the extreme temperatures of the Matanegra area and its great performance at a very low cost.

The wines from this grape are usually straw yellow in color and have powerful and intense aromas of ripe fruit, with a slightly sweet flavor.

– Alarije: It is a strain with an upright bearing; long, strong and highly branched shoots. Due to its higher alcohol content and its fairly early ripening, premature harvests can be carried out to avoid the frequent storms of early autumn, thus preventing the berry from losing health and increasing quality.

Alarije wines appear fresh, smooth and very pleasant, with a straw yellow color. It is usually used to be mixed with other varieties, so that it provides fruitiness and freshness.

In reds:

– Cencibel or Tempranillo: The clusters of this variety are large in size, with marked shoulders, compact, uniform in size and color of the berries. Their strains tend to be of high fertility and high production.

The wines made with this variety, spread across the entire surface of the peninsula, are optimal for aging, with good body, finesse, intensity and aromatic complexity. They have a characteristic intense ruby red color.

The Tempranillo grape is used, among other things, to make young and aged wines.

– Garnacha Tintorera: Also known by the name Alicante Bouschet, Garnacha Tintorera has its origin in France with the crossing of Petit Bouschet and Garnacha made by Henri Bouschet in 1855.

The most striking characteristic of Garnacha Tintorera is its red pulp. It really is different inside since they are inks inside and with them you can achieve a much superior color in the wines compared to other varieties.

The wines produced from this grape are very dense, alcoholic, with great color and aromas of intense red fruits.

It is a variety that is not usually vinified alone, but is used to add color to the mixture.
